28/10: Gourmet October camp - Autumn Italian flavors
Benvenuti! Come and lose yourself in the warmth and generosity of an Italian autumn kitchen.
Italy knows autumn better than almost anyone. The markets fill up with pumpkins, chestnuts tumble from the trees, and every kitchen starts producing the kind of slow, loving food that makes you never want the season to end. Today Your young chefs get to step right into that world and cook it for themselves.
We open the session with a pumpkin and chestnut risotto. Your young cooks will discover the full risotto ritual then roasting pumpkin and buttery chestnuts go in towards the end, followed by a generous handful of parmesan.
Then, we switch gears entirely for something wonderfully hands-on: pumpkin gnocchi. Your children will roast and mash the pumpkin themselves, work it into a soft dough with flour and egg, roll it into long ropes, and cut it into little pillows before dropping them into boiling water and watching them bob to the surface. There is something deeply satisfying about making gnocchi.
Our chefs will be there at every turn, teaching the secrets of a proper risotto, explaining why gnocchi dough needs a gentle hand, and sharing the Italian kitchen wisdom that has been passed down through generations for very good reason.
