Ingredients (for 4 persons):
- 150g quinoa 
- 1 Halloumi 
- 4 tomatoes 
- 1 cucumber 
- 8 radishes 
- 1 lemon 
- 4 garlic cloves 
- 2 spring onions 
- 1 baby gem 
- Fresh mint 
- Olive oil 
- Balsamic vinegar 
Preparation time: 20 minutes
Utensils:
- 1 mixing bowl 
- A wooden spoon 
- A chopping board 
- A knife 
- A frying pan 
- A sauce pan 
You can put this salad in a pitta bread if you want to eat it as a sandwich!
Step-by-step recipe:
- Rinse and cook the quinoa, according to the instructions on the packet, in a sauce pan with water. 
- Slice the halloumi and cook it in a frying pan, with a drizzle of olive oil on medium heat. Your halloumi is cooked when it is golden colour. 
- In a small bowl, prepare the salad dressing by squeezing one lemon juice, add 4 tablespoons of olive oil, salt and black pepper. 
- Meanwhile, wash and cut your vegetables. Reserve in a bowl. 
- Add the cold quinoa on the top of your vegetables. Stir. 
- Add the grilled halloumi on the top. Drizzle with some balsamic vinegar and your salad dressing made previously.
