Bulgur salad

Ingredients:

  • 100g bulgur

  • 1 pepper

  • ¼ cucumber

  • ½ red onion

  • ½ lemon juice

  • ½ lime zest

  • 15-20 Mint leaves

  • Handful parsley leaves

  • Olive oil

  • Salt Black pepper

  • ½ tsp ground cumin

Utensils:

  • A knife

  • A chopping board

  • A serving plate

  • A grater

Play with the flavours by swapping some ingredients and using the leftovers found in your fridge. Pomegranate is a good one to bring some juicy and crunchy texture.

Step-by-step recipe:

  1. Wash your vegetables, peel the onion and garlic.

  2. Cut, very thinly, the vegetables and put them in a serving bowl. Repeat with the onion and garlic. Combine.

  3. Add the bulgur and squeeze the lemon on top. The lemon will cook the bulgur. Be patient and add more after one hour if still crunchy.

  4. Chop thinly the parsley leaves and mint. Sprinkle on the top. Zest the lime. Combine with the bulgur.

  5. In a small bowl, pour 2 tablespoons of olive oil, add the cumin, salt and black pepper.

  6. Combine and pour the salad dressing on the bulgur mix.
